Pickled Fennel

Use this on sandwiches with salami or roast pork. Toss through a potato salad or serve with fish and chips. Keep the left-over brine, whisk with extra virgin olive oil and it makes a great salad dressing.
- Ingredients: fennel, onion, spices in brine (white wine vinegar, water, sugar and salt.)
